INGREDIENTS
1 trimmed 4-5 lb prime tenderloin roast
1 TBSP clarified butter
Savenor's Prime Beef Rub
STEPS
Preheat oven to 375F
Brust the roast all over with melted clarified butter
Rub generously with Savenor's Prime Beef Rub (Savenor's Rosemary and Garlic rub works great as well!)
Set it fattier side up in a roasting pan just long and wide enough to hold the roast easily
Place it in the upper third level of the oven
In 6-8 minutes, rapidly turn the roast and baste with clarified butter.
Turn twice more during roasting time, basting with clarified butter, then with accumulated pan juices.
Begin testing the meat after 30 minutes of cooking. For a nice rosy rare roast, the internal temperature should measure at 120F. For best results, the doneness for a roasted tenderloin should be no more than 130F internal temperature.
Remove from oven and let rest 10 to 15 minutes. Save the roasting juices from the pan.
Carve to desired sizes.
