INGREDIENTS
1 tablespoon olive oil
3 tablespoons butter
½ cup chopped onion
⅔ cup chopped celery
⅔ cup chopped carrot
¾ pound prime ground beef (or pork, lamb, or even ground game!)
Salt
Black pepper
1 cup whole milk
1 cup dry white wine
1 ½ cups crushed tomatos
1 ½ pounds pasta
½ cup of water or broth
Freshly grated parmesan
Fresh basil for garnish and extra flavor
STEPS
Saute the chopped "trinity" (carrot, onion, celery) for about 2 minutes, stirring vegetables to coat them well. The onion should be transluscent.
Add ground meat of your choice, a large pinch of salt and some pepper. Make sure to crumble the meat and stir well and cook until the meat is well browned.
Add milk and let it simmer gently, until it has bubbled away.
Add the wine, let it simmer until it has evaporated, then add the crushed tomatoes and stir to coat all ingredients well.
Turn the heat down to a low simmer. Cook, uncovered, for 2-3 hours and stir in small amounts of water or broth occassionally to avoid drying out. At the end, no floating liquid should be left.
Taste and correct for salt.
Toss with cooked drained pasta and serve with freshly grated Parmesan and fresh chopped basil.
